Thai Peanut Sauce

  • Thai Peanut Pizza1 cup creamy peanut butter
  • 1 13.5 oz can coconut milk
  • 1 clove garlic, peeled and smashed
  • 1 tablespoon Thai seasoning sauce or fish sauce
  • 1-2 tablespoons Thai red chili paste
  • 1 teaspoon sesame oil
  • 1 tablespoon lime juice

 

 

Combine all ingredients into a blender and mix well. Amounts can vary depending on how peanutty, coconutty, or spicy you want it. Use to make a Thai chicken pizza or mix into pasta and vegetable stir-fry.

 

When I was pregnant, I went thru a phase where I had to have Thai food…chicken pad thai and vegetable panang curry were my go-to dishes at least once a week (sometimes more!). Now, my girls love this peanut sauce on both pizza and in the stir-fry.
