Sweet Potato Pancakes

1 cup all-purpose flour

1 cup whole wheat flour

4 tsp baking powder

2 Tbl brown sugar

1 tsp cinnamon

Pinch of nutmeg

2 cups milk

4 tsp melted butter, plus more for greasing skillet

2 whole eggs

1 sweet potato, cooked until tender, peeler and pureed (about 1 cup)

 

In a large bowl, combine all ingredients. Mix together and whisk until smooth. Cook batches in buttered skillet on medium high temperature until bubbles form on the surface, then turn over and cook until dark golden brown.

 

I admit that I have slacked off when it comes to healthy eating both for myself and my family. So my new years’ resolution is to bring the veggie back! We still want yummy food but just with a healthy twist! Adding sweet potatoes to my pancakes seems like the best of both worlds.  I got this recipe from the Food Network and it is amazing!
