Is there anything else better on a hot day? Ok, maybe a cold beer or a margarita but let’s talk family friendly treats! I have become obsessed with making popsicles for my girls using fresh and healthy ingredients…they think it is a special treat, and I feel good that they are eating all the colors of the rainbow in the day 🙂

Here are some of my creations that I think are worth sharing…and yes I have made a few that are not worth sharing!

 

 

* Strawberry Mango

6-8 fresh strawberries

1 mango

 

 

*Tropical Pops

1 ½ cups fresh pineapple chunks

1 banana

1 ½ cups unsweetened coconut milk

½ teaspoon vanilla extract

 

 

*Strawberry Banana

6-8 fresh strawberries

1 banana

1 cup unsweetened coconut milk

¼ cup pineapple juice

1 tsp vanilla

 

 

*Berry Popsicles

8-10 fresh strawberries

1 6oz container fresh blueberries

1 6oz container fresh raspberries

1 6oz container fresh blackberries

 

You may want to strain this mixture after blending to remove most of the seeds.

 

 

*Pina Colada

2 cups unsweetened coconut milk

1 cup fresh pineapple

1 tsp vanilla

 

Blend all ingredients for each recipe, using a blender and add honey for sweetening to taste. Pour into popsicles molds and freeze for at least 4 hours before serving.
