1 tsp cinnamon (optional)
Mix dry ingredients together. In separate bowl, whisk the egg, melted butter and vanilla together. Combine the eggnog and buttermilk. Make a well in the dry ingredients and pour in the wet mixture. Whisk gently. Do not over mix. These pancakes are thick but yummy!
*Cinnamon can be mixed in the batter or sprinkled on top after cooking and covered in syrup.
