Dinner Prep Made Easy – Pork Tenderloin

Pork tenderloinI buy pork tenderloin from Costco…$15 for 4 tenderloins about 1 pound each…1 tenderloin easily feeds our family of four.  Since it comes in bulk (and I don’t want to eat pork 4 days in row, I buy my other ingredients and prep the pork to make dinner easy in the future.  Put one pork tenderloin in a ziploc freezer bag with 1-2  tablespoons of chopped garlic, 1-2 tablespoons of chopped cilantro and 1-2 tablespoons of olive oil.  Season with salt and pepper.  *Amounts are strictly based on your tastes, add more or less as you please.  Seal the bag and freeze!  Defrost overnight.  It’s that simple!  To cook, all you have to do is grill or sear in a pan, slice thinly for cuban sandwiches or place the tenderloin in a crock pot for 6-8 hours, shred and make fresh tacos.

*Alternatively, season the pork with 1-2 tablespoons of sesame oil and garlic, thinly slice and then throw quickly into a wok with vegetables for a lovely stir fry dinner. Even a half of a pork tenderloin will go a long way
