Green Bean FriesCrispy Oven-Baked Green Bean Fries

fresh greens beans

½ cup flour

2 eggs, beaten

 

Panko Mixture

1 cup Panko breadcrumbs

½ cup Parmesan cheese, grated

fresh ground pepper

 

Pre-heat oven to 425 degrees F. Line a baking sheet with parchment paper and set aside.

Place flour, eggs, and Panko mixture in 3 separate bowls.

Dredge beans in flour, then eggs, then panko mixture.

Place on baking sheet. Bake for 10-12 minutes until golden brown and crispy. Serve immediately.

 

*Getting my girls to eat a vegetable is not easy, especially if it is green! To be honest, I am not a big fan of green beans either but I know that it is good for me so I eat a few on occasion. Disguising green beans as fries and making them crunchy is pure genius! I really liked them, my girls were not huge fans but they did at least try them which is huge! I am going to try following this recipe with asparagus too!
