*I prep an entire bag of spinach…cut off any big, thick stems off and throw away. Chop the spinach into bite size pieces. Put all chopped spinach into a pot and add enough water to just cover the bottom of the pot. Cook on medium heat just until the spinach starts to wilt and get tender. This can all be frozen in ice cube sizes for easy use in the future.
Mix ingredients together. Melt ½ tablespoon of butter in a fry pan. Once the pan is hot, pour in mixed ingredients and cover. Cook on medium-high heat for 3 minutes or until the eggs start to set. Turn eggs over and continue cooking until fully cooked.
**My girls LOVE these eggs…even better than without the spinach so at least I know they are actually eating something green (which rarely happens any other way). Just be sure to let the eggs cool and cut into small pieces before giving them to your baby. Once pieces start getting thrown across the room, they are likely done with eggs and ready for an eggo J
