Blueberry Pancakes

 

Who doesn’t want a breakfast made up of pancakes whipped up from scratch with fresh blueberries sprinkled in?!?!  Let’s face it, that sounds good but is not always an easy thing to achieve.  Sometimes in the morning, my girls act like they haven’t eaten in days, and I barely have a few minutes to get food into their mouths before a complete meltdown ensues. So…I cheat. This is not my most gourmet recipe, if you even want to call it a recipe at all…but it is tasty and it gets the job done quickly. I use a pre-packaged blueberry muffin mix (any flavor muffin mix will do) and follow the directions on the package but instead of baking it as a muffin, I cook it like a pancake. I used the package pictured only because it was on sale at the time. It only calls for ½ cup of milk but since I have used this before, I know that it can be kind of crumbly so I add an egg as well to make it more cake-like and bump up the nutrition and calories for my sometimes picky eaters. Put a little butter in a pan and it cooks in just a few minutes rather than baking for 15-20.
