In a small bowl, beat 2 eggs. In another bowl, combine bread crumbs, parmesan cheese, onion powder, and garlic powder and mix well. Dip each zucchini slice first into egg mixture and then dredge in bread crumb mixture. Place on a non stick baking sheet in a single layer. Bake at 375 for 20-30 minutes until desired crispiness…the longer they bake and the darker the color, the more crisp the chip.
I adapted these from a recipe I saw on Food Network’s website. One of my girls won’t eat anything that looks like a vegetable but because these “chips” are crunchy, she gobbles them up!
